This UK organic grown stoneground and dressed heritage White Spelt flour has been long prized for it's very high protein content (16%). Creamy in colour, smoot and mildly nutty in flavour it produces light, easier to rise loaves and is perfect for cakes, pastry, flatbread and pizza bases. Our ancient grain 16% protein, high gluten Wholemeal Spelt has been stoneground from home grown organic Spelt wheat grains and has a sweet and nutty flavour adding an extra depth to your baking and is perfect for making bread rolls, muffins, pancakes and waffles. Full of nutritious goodness it is an excellent source of both fibre and protein and contains natural vitamins B1, B6 and E and rich in minerals - thought to help reduce the risk of type 2 diabetes as well as stroke, heart attack and some cancers. Nutritious mineral-rich Black Wheat wholemeal flour is stone milled in small batches from the Blacksmith grain variety grown in Lincolnshire. It has a 11.4% protein and retains its colour due to characteristic Anthrocyanins when baked imparting a unique flavour profile and a soft chocolate hue to breads and rolls, muffins, pastry and cakes *for a good rise we recommend you mix between 20-30% with one of our strong flours.   ALLERGEN Wheat Gluten
